Recipe of the Week

 

Dayton’s Oktoberfest celebrations may only last a weekend, but you can bring the spirit home with these hearty brats and creamy beer cheese dip. Perfect for a fall football game or backyard get-together!”

 

Oktoberfest Brats with Beer Cheese Dip

Ingredients

For the Brats:

  • 6 bratwursts (local or German-style if possible)

  • 2 tablespoons butter

  • 1 large onion, thinly sliced

  • 2 cloves garlic, minced

  • 2 cups German-style beer (lager, pilsner, or Oktoberfest brew)

  • 1 tablespoon Dijon mustard

  • 1 teaspoon caraway seeds (optional)

  • Salt & pepper, to taste

  • Pretzel buns (or crusty rolls) for serving

  • Sauerkraut, for topping

For the Beer Cheese Dip:

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1 cup German-style beer (same type as used in brats)

  • 1 cup whole milk

  • 2 cups shredded sharp cheddar cheese

  • 1 cup shredded Swiss or Gruyère cheese

  • 1 teaspoon Dijon mustard

  • ½ teaspoon smoked paprika

  • Salt & pepper, to taste


Directions

Step 1 – Cook the Brats

  1. In a large skillet, melt butter over medium heat. Add onions and garlic, cooking until soft and golden.

  2. Add bratwursts to the skillet. Pour in beer, Dijon mustard, and caraway seeds. Season lightly with salt and pepper.

  3. Bring to a gentle simmer, cover, and cook for 15–20 minutes, turning occasionally, until brats are cooked through.

  4. For extra flavor, finish brats on a hot grill or grill pan for 3–4 minutes per side until browned.

Step 2 – Make the Beer Cheese Dip

  1. In a saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking 1–2 minutes.

  2. Slowly whisk in beer and milk, stirring constantly until smooth and thickened (about 5 minutes).

  3. Reduce heat to low, then stir in cheeses, mustard, and smoked paprika. Season with salt and pepper. Keep warm over low heat.

Step 3 – Serve

  • Place brats in pretzel buns, top with sauerkraut and onions.

  • Serve with warm beer cheese dip on the side (perfect for pretzels or drizzling over the brat!).

  • Pair with a local Oktoberfest beer from Dayton’s breweries (Warped Wing, Dayton Beer Co., or Fifth Street Brewpub).
