🥣 Creamy Roasted Butternut Squash & Apple Soup

Serves 4–6 • Prep 15 min • Cook 45 min • Perfect for crisp fall evenings

This cozy, velvety soup brings together the earthy sweetness of roasted butternut squash with a hint of tart apple. It’s simple, seasonal, and perfect with crusty bread on a cool Dayton night.

Ingredients

  • 1 medium butternut squash (about 2½ lb), peeled, seeded & cubed
  • 1 large apple (Honeycrisp or Gala), peeled & chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 3 cups vegetable broth (or chicken broth)
  • ½ cup heavy cream or milk (optional for creaminess)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground cinnamon
  • Optional: pinch of nutmeg, drizzle of maple syrup, roasted pumpkin seeds for garnish

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss squash, apple, and onion with olive oil, salt, pepper, and cinnamon. Roast 25–30 minutes, stirring once, until tender and golden.
  3. In a pot, sauté garlic briefly in a drizzle of oil (30 seconds). Add roasted vegetables and broth.
  4. Bring to a simmer, then reduce heat and cook 10–15 minutes to let flavors meld.
  5. Blend until smooth using an immersion blender (or carefully transfer to a blender in batches).
  6. Stir in cream or milk for richness. Taste and adjust seasoning—add maple syrup or nutmeg if desired.
  7. Serve warm, topped with roasted pumpkin seeds, a drizzle of cream, or chopped herbs.
